Chinking is the method used to fill all the gaps between the logs. Some use mosses, some use paste or even mortar for this, so think ahead what you want to do.
One of the people I admire a lot nowadays is the man behind the YouTube channel "My Self Reliance". He has build a log cabin from scratch in the Alaskan wilderness without any powertools or cranes!
